香港:逸東軒 - 秋季菜式
不知不覺,原來已經立秋,雖然天氣還是很炎熱,但其實也應該要進食秋季食療。上年開始香港逸東酒店Eaton Hong Kong按時按節推出廿四節氣餐單,立秋過後,酒店也準備好一系列秋天菜式,今次更請來中醫師一起編寫食譜,這天就來到逸東軒吃午飯試試新菜。
先來兩款前菜,太白醉雞卷,Marinated Turnip Rolls with Shredded Chicken,Carrot & Cucumber Slices,$80,秋天適合多吃蘿蔔,再加入花雕酒來浸雞,感覺滋補。
蟹肉合桃黑豚肉凍,Marinated Kurobuta with Walnuts & Crabmeat,$78,把蟹肉、黑豚肉及湯汁造成肉凍,還有合桃有健胃、補血、潤肺等功效,又可在秋天多吃。
兩款秋天湯水,椰皇蓉花膠玉竹淮杞燉螺頭,Double-boiled Sea Whelk Soup with Fish Maw,Lily Bulbs,Yam & Young Coconut,$138,及蟹肉萬壽果四寶湯,Double-boiled Whole Papaya with Crabmeat,Yellow Fungus & Lily Bulb Soup,$138。兩款湯水都十分滋潤養顏,喜歡椰皇蓉湯的味道夠清甜,又帶椰香。
這次秋天食療的主菜有七款,試了其中兩款,柚子醬鱔球伴香鱈魚,Deep-fried Eel Fillets with Pomelo Sauce accompanied with Deep-fried Silver Cod Fish with Preserved Beancurd Paste,$238。兩款魚肉各自炸香,再分別配上不同醬汁,鱔球跟上柚子醬,酸酸的,肉實一點,而鱈魚肉較腍,口感不同。
南瓜牛油果蛋白崧子五榖飯,Fried Assorted Grain Rice with Avocado,Pine Nuts & Egg White in Whole Pumpkin,$168。來吃點炒飯,用了健康的五榖飯加入崧子、南瓜、牛油果及蛋白,飯夠乾身不油膩,中醫鼓勵要吃飯,有飯氣可暖胃。
另外,這天還試了另一款剛得了香港旅遊發展局主辦2014年「美食之最大賞」海鮮蝦組奬項,荷池貴妃子母蝦,Deep-fried Shrimps & Steamed Egg White Topped with Crab Roe & Goose Liver in Egg Shell,炸蝦肉爽,跟上蛋白,蟹籽及少許鵝肝,配起來吃都不錯。
最後甜品有,冬蜜雪耳燉原來雪梨,Double-boiled Whole Peat with Honey & Snow Fungus,$38,綠茶杏汁金球,Crispy Almond Buns with Green Tea Juice,$48。來一個原隻雪梨糖水,不太甜,又滋潤。像小煎堆的金球內是綠茶杏汁,一咬開就會流出來,所以吃時要小心,綠茶味道挺濃,又有杏香。
雖然天氣還有點熱,但也要開始進食秋季食療,以滋養身體迎接冬天。
